Here’s a bit different of a difference, my mother’s obsessed with these meatballs, she buys them quite regularly and either serves them as meatballs or squashes them into burgers…. bizarre I know lol!

I’m unsure whether this should come under the “Waste Not Want Not Wednesday” because these ingredients were leftovers from the Pizza Pies I made, but it’s also quick and easy so it’s a win win! Before we start cooking chop the chorizo, roasted red peppers and the onion, I’ve cut the onion into half moon and the chorizo into chunks.

I had some Oil that came in a spray bottle, spray a light covering on the pan and heat. When the pan is warm add the onions and fry them until they start to soften.

When the onions start to soften add the chorizo and stir, you’ll need to cook them until they start to soften and also the oil from the chorizo comes out.

In a small bowl add 1 tsp of ground garlic and a large grinding of chilli flakes. Give them a mix and set aside.

Add the chilli flakes and garlic to the pan and stir thoroughly to combine the onions, chorizo, garlic and chilli.

Add the Char-Grilled Red Pepper and the Sun-Dried Tomato Pastes and stir thoroughly, allow the ingredients to mix together and get to know each other, the party is starting now!

Add the roasted red pepper and stir thoroughly to combine all the flavours, these are some of my favourite ingredients and it’s shaping up really nicely now.

Add the mixed dry herbs, if you don’t have a packet of mixed dry herbs you could use oregano, basil and coriander in equal measures.

Pour in the tinned tomatoes and mix thoroughly, allow everything to come to temperature. You can add water if you want more of a sauce, or add a bit of stock if you want to make some up with a stock cube.

Allow the mixture to simmer and come together nicely, turn the heat down and just check it from time to time.

Fry the meatballs in a pan with a small splash of oil, you want to cook them until they start to brown all over, you’re going to finish them off in the sauce so don’t worry too much.

Once the balls are brown add them to the sauce and mix through when you stir everything, do it gently and to ensure that you don’t break the balls up.

Serve this with some quick and easy basmati rice, use the type that you can cook in the microwave and it’ll be ready in next to no time.

I really enjoyed this, it’s very similar to the Sausage Meatballs in a Spicy Tomato Sauce I made in September last year. It’s really enjoyable, slightly spicy and a great to use the meatballs, they’re handy to have in the freezer , they can be defrosted and cooked quite easily.

This is a mix and match one for you this week, it’s Asda’s Beef Bourguignon in a tin and Merchant-Gourmet’s Red and White Quinoa, why you ask? The reason is because I wanted to use them up lol.

The idea between a meal in a tin is that it’s quick and easy when your in a hurry. The tin describes it as

Beef chunks with mushrooms, silverskin onions and smoked streaky bacon in a red wine sauce.

The nutritional information can be seen in the picture above, I’m not sure why it states “hob heated”, would that make a difference for the nutritional content?

I cooked it in a saucepan and stirred it occasionally on a medium heat, it’s important to ensure that all the ingredients are hot. I served this with the Quinoa to use it up, the Quinoa had cooking instructions on the back of the packet.

The cooking instructions are clear and concise, and include cooking instructions for three types of microwaves. There was also cooking instructions for cooking on the hob…. but I didn’t see them when I was preparing things lol. I also didn’t realise you could eat it cold straight from the package…. win win!

The calories were quite high in this pack, I realise that it was a pack for two but if you were someone with a large appetite. There was also 15.2g of fat in the whole pack which again is quite high.

The package cleverly provides you with some handy hints on what to do with the contents of the package, it also gives you the link to the website for more information.

  • Serve warm with lightly spiced chicken, fresh coriander and a spoonful of natural yoghurt.

  • Combine with tuna, spring onions and a squeeze of lemon juice for a fresh lunchtime option.

  • Create a superfood salad by mixing quinoa, feta, soya beans, cucumber, pomegranate seeds and sugarsnap peas. Dress with soy sauce, olive oil and lemon juice.

The package states that Red and white Quinoa has a nutty flavouring and is firm in texture. As I said earlier it can be used straight from the pouch in a cold salad or heat in the microwave and mix with roasted vegetables and cheddar cheese.

Where do I start, the Beef Bourguignon was ok, not brilliant but ok. It had a real winey taste to it, which I wasn’t overly fussy on and the texture to the ingredients weren’t a lot to be desired. I didn’t really get the smoked streaky bacon flavour and thankfully I couldn’t pick up the mushrooms. I was really disappointed and that’s why it’s getting a thee star rating3 stars

The Quinoa was slightly better although I don’t think it went with the dish I was serving it with, the accompaniment should have been mashed potatoes. I wouldn’t like to eat it cold from the pouch and I wasn’t’ overly enamored with the texture of it, but with some fish or chicken I suppose it would be a healthier option to rice. I’m awarding this four stars, I’ve tried lots of Merchant-Gourmet products over the years and this wasn’t one of my favourites.4 stars

Strictly Suppers 2015 #6 – Viennese Waltzing Whirls

This is a quick and simple one, I know it’s not strictly a supper as such but it’s flipping lovely. This is based on a Hairy Bikers Recipe for Viennese Whirls, Saturday’s episode saw a Viennese Waltz which Craig described as having “no grace and elegance” and said it was common but he loved it. The highest scoring Viennese Waltz in this series was from Helen George who scored 39 with her partner Aljaž dancing to “At Last” by Etta James (week 10) and the lowest was by Carol Kirkwood and Pasha who scored 21 dancing to “I’ve Been Loving You Too Long” by Slade week 5). Sadly Helen and Aljaž were eliminated last night, up against judges’ pets Georgia and Giovanni I suppose they were always going to lose.

I know what you’re thinking, is this an advert for Asda…. no it’s not, but my mother shops there, hence most of the ingredients being Asda’s own brand 😆 .  There weren’t many ingredients as this was such a quick and easy recipe to make, the only thing I’d probably change is I’d add a vanilla pod instead of Vanilla Extract. The equipment required is minimal too, although you will need a piping bag and ideally (though not essential because I didn’t have one) a star shaped nozzle.

In a bowl weigh out the Icing Sugar, Flour, Cornflour, Butter and Vanilla Extract. Once you’ve weighted them, mix them thoroughly until their all combined and creamy. I didn’t have plain flour I only had Self Raising but it did the job.

Once fully mixed spoon the mixture into a piping bag with a star shaped nozzle on the end. I didn’t have a star shaped nozzle as you can see so Kirsty very efficiently piped them into swirl shapes. When you pipe them make sure you leave enough room between each one.

Place them in a preheated oven for about 15 minutes or until they are a pale golden brown in colour. Once they are cooked place them on a wire cooling rack and allow them to chill out and have a breather while you make the filling…. and no you can’t eat them yet… I know you want to I can sense it 😯 !

For the filling place Icing Sugar and the Vanilla Extract in a bowl, then add the butter.

Mix thoroughly until you get a buttercream consistency. The recipe says you need to pipe this onto half the biscuits but we just spooned it on.

On the other half of the biscuits place the jam. Don’t be a burke like me and put too much on, that’s what happens when you have a drink when you’re cooking… oh yes by the way I’ve fallen off the wagon… moving on 😳

These were buttery and crumbly, they were sweet but the jam helped to balance the sweetness out. These were so good my parents have asked me to make them again, although I’ve got strict instructions from Kirsty to buy a nozzle for my piping bag next time.

The subject of this week’s Time-Saving Tuesdays review is an Asda Smart Price Value Lasagne. Like the Asda Bolognese Pasta Bake I Reviewed on the 23rd of June this was a Smart Price ready meal for one, but unlike it’s bolognesy counterpart it doesn’t quite live up to the mark, let’s find out why shall we?

The ingredients above seem fairly straight forward enough and the majority of them I use in my lasagne as do most people. Here’s the geeky sciency bit for all those of you out there who are fully au fait with the importance and the meaning behind the nutritional information. There is 6.6 grams of saturated fats and 8.4 grams of sugar, I was surprised at that, it’s practically a dessert 😆 .

I have to admit that this ready meal was…. pants, don’t get me wrong it wasn’t as bad as the Westlers Burgers in Onion Gravy but it was pretty bad. In saying that, it could have been the way I cooked it, the box described it as

Layers of egg pasta with tomato and minced beef filling, topped with béchamel sauce and mature Cheddar cheese.

The sauce was runny and not particularly tasty, there was no depth of flavour to the mince and tomato sauce and the past just disintegrated as soon as you put your fork near it. 5 stars

I’d give this a 5 stars, I want to give it a 4 but it was edible, I just thought it was pretty poor compared to Pasta Bake. Another reason why I’ve given it a five is it’s 69p, that’s pretty cheap and although I’ve slated it it is edible, and would fill a gap if you were in a rush.

This was another stunner, it was so tasty. It had spice, deep tastes of chorizo which was had tastes of smoked paprika. It also had the deep cheesey taste which made it comforting. It did have B3 and B1 (Niacin and Thiamin) as ingredients, so this provokes more thought. On the whole I’d give this a 6/7 out of ten, I’ve gone with 6 because it uses the oven but I’d certainly buy it again!6 stars
